Bester has a scientific name of Huso Huso x Acipenser Ruthernus. This is one of the most intriguing sturgeons on the USA market. It is hybrid sturgeon and has 50% DNA of Beluga and 50% DNA of Sterlet. Bester is extremely rare and out of entire sturgeon family it is  closest relative of Beluga.

Bester roe egg is medium size which varies between 2 and 2.5 mm. It has astonishing blackish/grayish color. Bester has amazing delicate mild flavor.
